At the beginning of the first day of class, the oven was loaded with wood and set to burn. This was started before class actually began. This photo shows the initial burn once it is going strongly. Note the thickness of the hearth (aka floor). The original floor was refractory concrete and was too hot. Dan modified the oven by adding a firebrick hearth over the original hearth. This made a oven with more traditional baking characteristics.
